What you need

onion

tbsp fresh ginger

garlic clove

lb extra firm tofu

water chestnuts

cup low-sodium soy sauce

carrot

cup green onion

bibb lettuce

cup salted peanuts
Instructions
0 Heat the oil in a large skillet over medium heat. 1 Add the onion, ginger and garlic and saute for 5 minutes, until the onions are soft. 2 Add the tofu and water chestnuts and cook 4 minutes, until heated through. 3 Stir in the soy sauce, carrots and green onions. 4 Serve in lettuce cups and top with chopped peanuts.View original recipe
