Sweet and Sour Pineapple Chicken

Sweet and Sour Pineapple Chicken is one of my all time favorites, but I wanted a healthier version.

What you need

egg white

tsp kosher salt
tsp cornstarch

pineapple chunks

cup white vinegar

cup ketchup

tbsp brown sugar
tbsp oil

red bell pepper

yellow bell pepper

cup snow peas

tsp fresh ginger

scallion
Instructions
0 Place the chicken cubes in a bowl and toss with the cornstarch. Add the whisked egg and 1/2 teaspoon salt, and toss to coat. Let sit for 15 minutes at room temperature, or overnight in the fridge. 1 In a mixing bowl, whisk together the pineapple juice, vinegar, ketchup, brown sugar, 2 teaspoons cornstarch, and 1/2 teaspoon salt. 2 Heat 1 tablespoon of oil in a large saute pan or wok over high heat. Add the chicken in an even layer, and cook for 3 minutes. Remove to a plate. 3 Turn the heat to medium and add more oil if needed. Add the bell peppers, snow peas, and ginger and cook for 1 minute. Add the pineapple chunks, sauce, and chicken. Turn the heat up to high and cook until the chicken is cooked through, about 3 minutes. Top with the chopped scallions.View original recipe
