1 lemon juice

3 Begin by washing, stemming, and halving the strawberries. 0 Place the strawberries, lemon juice, and honey (or agave nectar) in a saucepan or pot and bring mixture to a boil over medium heat. 1 Reduce heat to low and simmer uncovered for 50-60 minutes, stirring occasionally until most of the liquid has evaporated (you want the preserves to have little chunks of strawberries). 2 Allow the preserves to cool before transferring them to a jar or container with a lid.
