What you need

cup buttermilk
egg
tbsp oil

cup all purpose flour

tbsp sugar

tsp baking powder

tsp baking soda

tsp kosher salt
Instructions
0 In a blender, combine the spinach, buttermilk, egg, and oil and blend until smooth. 1 In a separate bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. 2 Whisk the wet ingredients into the dry ingredients until just combined. Be careful not to overmix. 3 Heat a large pan or griddle over medium heat and grease with butter or oil. Pour about 1 tablespoon of the pancake mixture onto the griddle, making as many pancakes as will fit and cook for 2 minutes. 4 Flip the pancakes and cook for one minute longer. 5 Serve warm with favorite toppings.View original recipe
