Spinach Cake Muffins

What you need
extra large egg

tsp vanilla extract

cup fresh spinach

cup sugar

tbsp avocado oil

all purpose flour

tsp baking powder

tsp baking soda

tsp kosher salt
Instructions
0 Preheat oven to 350 F. 1 Place the first 6 ingredients in a food processor and puree. 2 Place the remaining dry ingredients in a separate bowl and combine. 3 Pour the spinach puree in a large mixing bowl. 4 Slowly mix the dry ingredients into the wet until combined. 5 Scoop batter into a greased mini or regular muffin tin, filling each cup 2/3 of the way. 6 Bake for 18-20 minutes for regular-sized muffins or 12 minutes for mini muffins.View original recipe
