What you need

white onion

clove

cup brown rice

cup low-sodium chicken stock

canned diced tomatoes

tsp oregano

tsp cumin

tsp kosher salt
Instructions
0 Heat the olive oil in a heavy bottomed pot. 1 Saute the onions for 5 minutes or until translucent. Add the garlic and cook another minute. 2 Place rice in the pot and stir to coat with oil. 3 Add the chicken stock, diced tomatoes and remaining ingredients and stir. 4 Bring the mixture to a boil, reduce the heat to low, cover and cook for 1 hour or until tender. 5 Serve.View original recipe
