What you need

yellow onion

celery

carrot

cup shiitake mushrooms

tsp kosher salt

clove garlic

tbsp balsamic vinegar

tbsp smoked paprika

tsp cumin powder

cup dried lentils

cup vegetable broth

cup greens

greek yogurt
Instructions
0 Heat olive oil in large stock pot over low/medium heat. Sauté onions for 4 minutes. Add celery and shiitakes and sauté an additional 3 minutes or until vegetables are fork tender. Add garlic, 1 tsp salt, and carrots and cook for an additional minute. 1 Add the balsamic vinegar, smoked paprika, cumin, lentils and broth. Bring to a boil, reduce to a simmer and cook for 20-25 minutes or until lentils are soft. 2 Add the greens of choice and 1 tsp salt.
