What you need

cup onion

clove

cup zucchini

cup eggplant

cup bell pepper

cup canned diced tomatoes

tsp parsley
Instructions
0 Heat the olive oil in a large saute pan over medium heat. 1 Add the onions and lightly saute for 2 minutes (make sure not to brown them). 2 Add the garlic and cook another minute. 3 Add the remaining vegetables and saute for one minute, uncovered. 4 Cover and cook for 6-8 minutes. 5 Add the parsley and continue to cook uncovered for one more minute.
