What you need

cup old fashioned oats

tsp baking powder

tsp kosher salt

tsp ground ginger

tsp cinnamon

tsp ground nutmeg

cup brown sugar

cup unsalted butter

tbsp molasses

tsp vanilla extract

Instructions
0 Place the first 8 ingredients in a food processor and pulse to combine. 1 Add the butter and pulse to combine. 2 Add the molasses, vanilla and egg and pulse until the dough forms into a ball. 3 Wrap the dough in plastic wrap and chill in the fridge for 30 minutes. 4 Preheat oven to 350 F. 5 Roll out dough to 1/4 inch thick and cut out animal shapes. 6 Place cut outs on a Silpat or parchment lined baking sheet. 7 Bake for 12-15 minutes, or until the cookies are set and starting to turn golden brown on the edges.View original recipe
