Crock Pot Vegetarian Chili

What you need

oz vegetable broth

cup red kidney beans
tbsp olive oil

onion

garlic clove

celery stalk

carrot

bell pepper

tbsp chili powder

tbsp cumin

tsp kosher salt

tsp sweet paprika
Instructions
0 Place the first 3 ingredients in the Crock Pot. 1 Heat olive oil in a pan over medium heat and saute onions for 5 minutes. Lower heat if they start to brown. Add garlic and continue to saute another 2 minutes. Pour the onion mixture into the crock pot, add the remaining ingredients and stir to combine. 2 Cook on low for 10 hours or high for 5-6 hours. 3 * for an added boost of nutrition add 2 cups of sliced kale or chard in the last hour of cooking. 4 ** serve with hot sauce if you want your chili spicy.
