What you need

tsp baking powder

tsp kosher salt

tsp ground cinnamon

cup dark brown sugar

cup buttermilk
extra large egg

tsp vanilla extract

cup butter

granny smith apple

cup old fashioned oats

cup unsalted butter

tbsp pumpkin seeds
Instructions
0 Preheat oven to 400 degrees. 1 In a bowl, whisk together the flour, baking powder, salt, cinnamon, and brown sugar. 2 In a separate bowl, whisk together the buttermilk, egg, vanilla, and melted butter. 3 Stir the dry ingredients into the wet ingredients and mix until just combined. 4 Fold in the apples. 5 In a food processor, combine the oats, brown sugar, chilled butter, and pumpkin seeds. Pulse to combine and chop the pumpkin seeds. 6 Pour batter into greased muffin cups, top each with 2 teaspoons of the pumpkin seed mixture, and bake 20-22 minutes, or until a wooden pick inserted in the center comes out clean.View original recipe
