Instructions
0 Preheat oven to 400 degrees. 1 Slice potatoes into 1/4 inch rounds with a knife or mandoline. 2 Place a 24 inch sheet of parchment (or foil) on a cookie sheet and fold in half (this could also be done in smaller individual packets using smaller pieces of parchment or foil) 3 Place potatoes on one half of the parchment, sprinkle with olive oil and salt and toss to combine. 4 Fold the top piece of the parchment over the potatoes and twist edges together tightly to completely seal the packets. 5 Place on a cookie sheet and bake for 30 minutes (it’s the same time if you use smaller packets). 6 Cut a hole in the top of the packets and serve. 7 After potatoes bake top with favorite condiment including butter, sour cream, cooked vegetables, bacon and more.
