California Style Cauliflower Rice and Beans

In California we eat a lot of beans and rice, so this is my twist on the classic dish. It’s not only super healthy, but also beautiful to look at and totally kid friendly.

What you need

onion

garlic clove

red bell pepper

head cauliflower rice

can black beans

tsp kosher salt

tsp ground cumin

tsp paprika
cup salsa

cup dried cilantro
Instructions
0 Place a large sauté pan over medium heat. Add oil and sauté onion and garlic for 2 minutes. Add bell pepper and cook an additional 1 minute. 1 Add chopped cauliflower, cumin, paprika, black beans and cook for 3 minutes or until cauliflower is tender. 2 Stir in the salsa and cook an additional minute.
