head cauliflower rice

tsp fresh ginger

cup fresh spinach

cup edamame

tbsp low-sodium soy sauce

tsp kosher salt

Instructions
0 Heat a large wok or sauté pan over medium heat, add oil and sauté onion and ginger for 1 minute. Add bell pepper and cook for 1 minute. 1 Add cauliflower and cook for an additional 2-3 minutes. Add spinach, edamame, soy sauce and salt. Cook for 3-4 minutes or until cauliflower is tender. 2 Top with chopped scallions and serve.View original recipe
