Preheat the oven to 400F degrees.
Slice the sweet potato into 1/3 inch slices. Using a paring knife, cut jack-o-lantern faces into the sweet potatoes.
Place the sweet potato slices on a parchment lined baking sheet, spray with oil, sprinkle with salt and bake for 20 minutes (alternatively they can be cooked in an airfryer for 10 minutes at 350 degrees).
