Glazed Sweet Potatoes with Maple Syrup & Lime

Heat the oil in a saucepan over medium heat. Saute the sweet potatoes for 3 minutes.
Add the lime juice and water, cover, reduce the heat to low and cook for 15 minutes.
Cook potatoes until fork tender, add the maple syrup, cover and cook an additional 2 minutes or until glazed.
Serve.
